Spicy Black Bean & Corn Salsa Print E-mail

2 cups drained canned black beans 
1 16 oz can whole kernel corn, drained
1/2 cup fresh chopped cilantro
2 tbs fresh lime juice
1/4 cup minced red onion
1/2 medium yellow pepper
1/2 medium red pepper
1 1/2 tsp ground cumin
6 tbs olive oil
1/4 cup minced green onion
1/2 cup chopped tomatoes
  • Mix all ingredients except for tomatoes in a large bowl.  Season to taste with salt & pepper.
  • Cover and refrigerate until cold. (can be prepared 1 day ahead and held refrigerated).
  • Mix tomatoes into salsa and serve.
 Makes about 3 1/2 cups
