Smoked Salmon & Tortellini Salad Print E-mail

1/4 cup sour cream 
1
/4 cup olive oil
2 tbs fresh lemon juicelgbgsalad
3 tbs dijon mustard
1 tbs dry white wine
1/4 tsp white pepper
1 9-oz package fresh cheese tortellini
1 tbs olive oil
1/2 cup thinly sliced red onion
1/4 cup chopped chives or green onion tops
1/4 cup chopped fresh dill
2 tbs drained capers
3 oz smoked salmon or lox, cut into thin strips

  • Whisk first 6 ingredients in bowl.
  • Cover and chill dressing until ready to use.
  • Cook tortellini in a large pot of boiling salted water until
    just tender but still firm to bite. Drain.
  • Transfer to bowl. Add 1 tbs oil; toss to coat.
  • Add red onion, chives, dill and capers; toss again. Cool.
  • Add salmon and enough dressing to coat and toss well.
  • Can be made 8 hours ahead; cover and chill.
 Makes 4 servings
